Le Ruote pazze (crazy wheels) from Pastificio Benedetto Cavalieri is a pasta from Salento that owes its name to its imperfectly round shape. However, after cooking, the ruote pazze do not flatten like rigatoni and paccheri , but remain nice and tight, allowing the sauce to penetrate and stay in place. This pasta has a cylindrical shape of about 22 mm high, consisting of a round crown (Ø 25 mm) connected to the hub (Ø 6 mm) by 6 spokes (of 9 mm). The crown, hub and spokes have 3 different thicknesses, which gives the chewing a specific sensation, comparable to the crumb and crust of good bread. Benedetto Cavalieri founded the pasta factory of the same name in 1918 and since then the aim has always been to produce high-quality pasta using the original delicato method: long kneading and pressing, slow pulling and drying of the dough at low temperatures, for the typical flavour and natural consistency of the pasta, optimally preserving the main components of durum wheat. Benedetto Cavalieri uses only the highest quality durum wheat, grown without artificial fertilisers, mainly in the hills of Puglia and Basilicata.
