Pecorino Fiore Sardo DOP di Gavoi
Pecorino Fiore Sardo DOP di Gavoi is the only Italian DOP sheep's cheese made from raw milk. It probably gets its name from the characteristic flower engraved on the bottom of the chestnut wood moulds that were used for its production until recently.
The cheese is made by shepherds in places where wood fires are still used, which gives it a slight smokiness. The scents and aromas are intense, and you can taste the sweetness of sheep's milk. This king of old cheeses adapts to different combinations: eat it with bread and water to enjoy its pure taste; with full-bodied red wine in the cold season; with sweet wine for a feeling of comfort; or with chilled champagne. It goes well with fruit, especially watermelon and figs, but also with sweet oranges and apples. It also goes well with ham and bacon, with fresh and firm tomatoes and onions. And it is an excellent cheese for grating.
