Mezzi Rigatoni are naturally rich in fibre and have a strong wheat flavour. Their diameter, combined with the characteristic ridges, make them ideal for retaining sauces, both inside and out. Benedetto Cavalieri founded the pasta factory of the same name in 1918 and since then the aim has always been to produce high-quality pasta using the original delicato method: long kneading and pressing, slow pulling and drying of the dough at low temperatures, for the typical flavour and natural consistency of the pasta, optimally preserving the main components of durum wheat. Benedetto Cavalieri only uses wheat of the highest quality, grown without artificial fertilisers, mainly in the hills of Puglia and Basilicata.
