Federico from the Cavaliera fattoria is a dry red sparkling wine from Grasparossa grapes, from organic farming. It is a wine from times gone by, harvested late and by hand, with a long maceration at a controlled temperature and refermentation in the bottle, according to the traditional dégorgement a la volé method. Indigenous yeasts without the addition of sulphur. Intense purple-red wine with strong hints of cherry and morello cherries.
