Conciato of San Vittore

Sheep's cheese from the Lazio region. The recipe was already used by the Samnites, a people who lived in the southern part of the Apennines around 600-300 BC. The antioxidant effect of the herbs with which they treated the cacciotta prevented bacterial growth. Even today, the crust is expertly 'dressed' with 15 aromatic herbs, including juniper, bay leaf, wild thyme, wild fennel, coriander, sage, black and white pepper, basil, rosemary and anise.
